EASY CHILI (veggie OR con carne)

This is our first recipe so we've decided to do something easy for you guys. Chili is something you can have fun with! Like it spicy? Add your favorite hot pepper! Like it chunky? Keep your vegetables cut into heartier chunks! Like a meat heavy base? Add your favorite ground meat (we LOVE ground pork)! This recipe is the basic so have fun with it. We like to add different spices each time we cook chili but keep the spices listed in this recipe too.
All of these ingredients can be purchased at the NoDa Company Store +GROCERY.
2 tablespoons Olive Oil
1 medium Onion (chopped)
1 medium Bell Pepper (chopped)
1 Jalapenõ (minced, seeds removed for less spice)
3 cloves Garlic (minced)
1 28oz can Diced Tomatoes
1 6 lb can Kidney/Black/Pinto Beans (your choice), drained
Heat large pot over medium-high heat. Add olive oil. Let the oil heat up for about minute then add onion. Cook onion until it's translucent, about 8-10 minutes then add bell pepper, jalapeño and garlic. Cook for another 5-10 minutes until the bell pepper is softened. (Add ground meat and cook throughly HERE)
Add spices and salt & pepper. We like chili powder (3TBL), paprika (2TBL), mustard powder (2TBL). Cook until fragrant, about 3 minutes.
Add canned tomatoes and beans. Turn heat to low and simmer for 30 minutes. Taste, add salt if necessary.
Top with cheese, cilantro, green onions and/or sour cream. Enjoy!
